Hello and welcome to Weeknight Dinners! If you’re new here and aren’t yet subscribed, let me help you with that:

Ciao! Meal plan v.6 is here! It’s Mexican-inspired and great for the end of summer. Ingredients are repurposed throughout (black beans, cabbage, avocado, fajita vegetables, and roasted potatoes are all used twice), but the dishes are different. Sunday’s batch cook / meal prep includes roasted potatoes, sautéd fajita vegetables, and chimichurri sauce. Do everything simultaneously, and you’ll be in and out of the kitchen in no time.

Bookmark this plan for when you know you’ll have a busy week. Once prep is done, the four meals come together in minutes.

Quick tip: Use a silpat or a parchment baking sheet to line your sheet tray when roasting your potatoes.

If you’re looking for other one-week meal plans, look at the April plan here, the May plan here, the June plan here, the July plan here, or the August plan here.

Here's this month’s menu …

Fish tacos with slaw and cilantro lime crema

If you know me personally or have been following my work for a minute, you know tacos are a staple in my diet. I just love them. They’re quick. They’re easy. They’re balanced. And they’re delicious. They’re also super versatile. This week’s recipe works well with fish, shrimp, chicken, or beef.

Ground beef fajita bowl with lime crema

Black beans are used here to stretch the ground beef while adding fiber and plant-based protein to the dish. Pinto would work just as well.

White fish with roasted potatoes and chimichurri sauce

This flavor-packed meal takes 10 minutes because 3/4 of it is prepped beforehand. What more could you want on a Wednesday night?

Taco salad with avocado lime crema

A crisp and colorful vegetarian salad packed with texture, fiber, and flavor. It also requires no cooking. It’s an all-around win that you’ll come back to again and again.

This plan is a sample of my weekly meal plan program, Weeknight Dinners. Like all plans, it includes a seasonal menu, a shopping list, a Sunday batch cook / prep-ahead guide, and four recipes. I hope it helps you feel more confident and comfortable in the kitchen so you can stress less about “What's for dinner?” and focus more on what's important to you.

PS: Click the PDF below for your complete meal plan with your menu, shopping list, and recipes. If you need to edit your shopping list for any reason (to sub an ingredient, cut some meals from the lineup, or add additional groceries), copy and paste it into a new Google doc or phone note and edit as needed. Happy shopping!
