Ciao! Meal plan v.5 is here! I’m really excited to share this menu with you—it has a lot of variety and flavor. The shopping list is really short this week as there’s a lot of repetition and repurposing of ingredients. Sunday’s batch cook / meal prep includes baked chicken (don’t skip the quick and simple salt brine), brown rice, and bulgur. Do everything simultaneously, and you’ll be in and out of the kitchen in no time.

Chicken taco salad
I love a fresh market salad at the beginning of the week, and this taco salad always hits the spot. It’s satisfying and great as a late summer meal. It’s also a nice lunch that packs well. Feel free to make extra servings of chicken and rice if you’d like to have it twice this week.
Kale tabbouleh with chicken
Tabbouleh is a great Middle-Eastern salad that’s refreshing and delicious. Made here with kale instead of parsley and enhanced with chicken, this dish is balanced and nutrient-dense.
Vegetarian fried rice
I love fried rice. I have it almost every week. It’s quick, easy, balanced, and delicious. It’s also super versatile and works as a great fridge clean-out meal. Like tacos, fried rice can be made with vegetables, tofu, chicken, shrimp, and eggs; a great staple recipe to master.
Chicken tostada
These chicken tostadas have it all—flavor, color, and a variety of textures. They come together in no time thanks to your batch cooked chicken and a can of black beans, making them a great end-of-the-week meal.

I hope it helps you feel more confident and comfortable in the kitchen so you can stress less about “What's for dinner?” and focus more on what's important to you.
